- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Juice of 2 lemons
- Zest of 1 lemon
- 2 teaspoons garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 2 tablespoons fresh parsley, chopped (optional)
If you’re out of fresh lemons, bottled lemon juice can work in a pinch. And if oregano isn’t your thing, try thyme or rosemary for a different twist.
Instructions
- Preheat your airfryer to 380°F. This is a great time to take a deep breath and remind yourself that cooking is as much about the journey as it is the destination.
- In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic powder, salt, pepper, and oregano. This mixture is where all the magic happens.
- Place chicken breasts in a large zip-lock bag or a shallow dish, and pour the marinade over them. Seal the bag or cover the dish, and let it sit for at least 10 minutes. If you’re not in a rush, letting it marinate for a couple of hours in the fridge is even better.
- Remove chicken from the marinade and place in the airfryer basket. Cook for 20 minutes, flipping halfway through, until the chicken is golden and cooked through. The aroma will remind you of those cozy dinners growing up, full of stories and love.
