- 1 1/2 cups apple cider
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- For the cinnamon sugar crust:
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F. Grease a 9×5 inch loaf pan and set aside.
- In a small saucepan, bring the apple cider to a boil. Reduce heat and simmer until it’s reduced to about 1/2 cup, approximately 10 minutes. Let it cool.
- In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, combine the cooled apple cider, melted butter, eggs, and vanilla extract. Whisk until smooth.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
- While the loaf is baking, mix together the cinnamon sugar for the crust.
- Once the loaf is done, let it cool for about 10 minutes. Then, using a pastry brush, coat the top with melted butter and sprinkle generously with the cinnamon sugar mixture.
- Let the loaf cool completely before slicing. Enjoy the delightful crunch of the cinnamon sugar crust with each bite!
