  • 1 1/2 cups apple cider
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the cinnamon sugar crust:
    • 1/4 cup granulated sugar
    • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F. Grease a 9×5 inch loaf pan and set aside.
  2. In a small saucepan, bring the apple cider to a boil. Reduce heat and simmer until it’s reduced to about 1/2 cup, approximately 10 minutes. Let it cool.
  3. In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In another bowl, combine the cooled apple cider, melted butter, eggs, and vanilla extract. Whisk until smooth.
  5. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the loaf is baking, mix together the cinnamon sugar for the crust.
  9. Once the loaf is done, let it cool for about 10 minutes. Then, using a pastry brush, coat the top with melted butter and sprinkle generously with the cinnamon sugar mixture.
  10. Let the loaf cool completely before slicing. Enjoy the delightful crunch of the cinnamon sugar crust with each bite!
