Deliciously Bold Asian Ginger Soy Glazed Cod Recipe

Learn how to make delicious Asian Ginger Soy Glazed Cod. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

  • 4 cod fillets (about 6 ounces each), skin removed
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons fresh ginger, finely grated
  • 2 tablespoons honey or maple syrup (for a vegan alternative)
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil (or any neutral oil like canola)
  • 1 teaspoon chili flakes (optional, for a little heat)
  • 2 green onions, thinly sliced, for garnish
  • 1 tablespoon toasted sesame seeds, for garnish
  • Salt and pepper, to taste

If you don’t have fresh ginger on hand, you can substitute with 1/2 teaspoon of ground ginger, but fresh really makes a difference here. Also, feel free to swap honey for maple syrup if you’re looking to keep it plant-based—both add that lovely sweet balance to the soy sauce’s saltiness.

Instructions

  1. Pat the cod fillets dry with paper towels and season both sides lightly with salt and pepper. This helps the glaze stick better and promotes even cooking.
  2. In a small bowl, whisk together the soy sauce, grated ginger, honey (or maple syrup), rice vinegar, minced garlic, sesame oil, and chili flakes if using. This is your flavorful glaze, so give it a little taste to make sure it’s balanced—sweet, tangy, and savory.
  3. Heat a large non-stick skillet over medium heat. Once hot, add a splash of oil to lightly coat the pan.
  4. Carefully place the cod fillets in the pan and cook for about 3-4 minutes without moving them. You want a nice golden crust to form.
  5. Flip the fillets gently using a spatula, then pour the glaze evenly over the fish.
  6. Reduce the heat to low and cook for another 4-5 minutes, spooning the glaze over the fillets occasionally. The glaze will thicken and create that glossy, sticky coating we’re after.
  7. Check for doneness by gently flaking the thickest part of the cod with a fork—it should be opaque and flake easily.
  8. Remove from heat and sprinkle with sliced green onions and toasted sesame seeds before serving.

One trick I’ve learned over the years (from those early kitchen adventures with my dad watching every stir) is not to rush the glaze. Letting it reduce slowly on the fish brings out the best flavor and texture. Patience here really pays off.
