- 4 salmon fillets (about 6 ounces each), skin removed
- 4 ounces Boursin cheese (herb and garlic flavor works best)
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice

- Salt and freshly ground black pepper, to taste

Substitution tip: If you can’t find Boursin cheese, cream cheese mixed with fresh herbs and garlic powder can be a tasty alternative. Just soften 4 ounces of cream cheese and stir in 1 teaspoon each of dried parsley, chives, and garlic powder until well combined.
Instructions
- Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper or lightly grease it with olive oil to prevent sticking.
- Pat the salmon fillets dry with paper towels—this step helps the cheese topping stick better and gives a nicer texture.
- In a small bowl, combine the Boursin cheese, minced garlic, olive oil, lemon juice, and thyme. Stir until smooth and well blended. If you’re using cream cheese as a substitute, mix it well with your herbs and garlic powder.
- Place the salmon fillets in the prepared baking dish, spacing them evenly. Season each fillet lightly with salt and freshly ground black pepper.
- Spread the Boursin mixture evenly over the top of each salmon fillet, creating a thick, even layer. Use the back of a spoon or a small spatula for this.
- Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and the cheese topping is golden and bubbly. The exact baking time will depend on the thickness of your fillets—mine usually take about 14 minutes.
- Remove from the oven and let rest for a few minutes. Garnish with fresh parsley and serve with lemon wedges on the side for an extra pop of brightness.
