- 4 Italian sub rolls (about 6–7 inches each)
- 8 ounces sliced Genoa salami
- 8 ounces sliced ham
- 8 ounces sliced provolone cheese
- 1 cup sliced pepperoncini peppers (or banana peppers as a milder substitute)
- 1/2 cup sliced red onions
- 1 cup shredded mozzarella cheese
- 1/4 cup mayonnaise
- 2 tablespoons Italian dressing (store-bought or homemade)
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Butter or olive oil for brushing the rolls
- Optional: sliced tomatoes or shredded lettuce for added freshness
If you’re short on time or ingredients, you can swap out the salami for pepperoni or even turkey slices, and provolone can be replaced with mozzarella or Swiss cheese for a different but delicious twist.
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- Slice your sub rolls lengthwise, but don’t cut all the way through—leave a hinge so the sandwich holds together.
- In a small bowl, mix together the mayonnaise, Italian dressing, dried oregano, and garlic powder to create a quick, flavorful spread.
- Brush the inside of each sub roll lightly with butter or olive oil. This step adds a golden crust and keeps the bread from getting soggy.
- Spread the mayo-dressing mixture evenly over the inside of each roll.
- Layer the sliced salami, ham, and provolone cheese inside the rolls.
- Top with sliced pepperoncini peppers and red onions for that perfect tang and crunch.
- Sprinkle shredded mozzarella cheese over the top for extra melty goodness.
- Place the sandwiches on the prepared baking sheet and bake for 12-15 minutes, or until the cheese is melted and the bread is toasted to a golden brown.
- Remove from the oven and let the sandwiches cool for a minute or two before slicing and serving.
One tip I’ve learned from the many times I’ve made this recipe between school drop-offs and bedtime stories: don’t skip the step of brushing the bread with butter or oil. It’s the little things that make a huge difference when you’re trying to turn a simple sandwich into something special, especially when you’re short on time and patience.
