Ingredients
Scale
- 4 ripe but firm pears (Bosc or Anjou work beautifully)
- 4 ounces goat cheese, softened
- 2 tablespoons honey, plus extra for drizzling
- 1/4 cup chopped walnuts or pecans (optional, for crunch)
- 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme (optional, for a savory touch)
- 1 tablespoon unsalted butter, melted
- Freshly ground black pepper, to taste
Substitution tips: If goat cheese isn’t your thing, cream cheese or ricotta can work in a pinch, though you’ll miss that tangy bite. For nuts, almonds or hazelnuts can be swapped in. And if you don’t have honey, maple syrup adds a lovely depth of flavor.
Instructions
- Preheat your oven to 375°F (190°C). This is the perfect temperature to get your pears tender without turning them to mush.
- Wash your pears and slice them in half lengthwise. Use a small spoon or melon baller to gently scoop out the core and seeds, creating a nice little well for the filling.
- Brush the cut sides of the pears with the melted butter to encourage caramelization and add richness.
- In a small bowl, combine the softened goat cheese with 2 tablespoons of honey, fresh or dried thyme, and a pinch of black pepper. Stir until smooth and creamy.
- Fill each pear half generously with the goat cheese mixture, smoothing the top with the back of a spoon.
- Sprinkle the chopped nuts evenly over the filled pears for that satisfying crunch.
- Arrange the pears cut side up in a baking dish. If you have any leftover butter, drizzle it over the pears for extra golden goodness.
- Bake for 20-25 minutes, or until the pears are tender when pierced with a fork and the goat cheese is slightly browned and bubbly.
- Remove from the oven and drizzle with a little extra honey while still warm. This finishing touch brings everything together beautifully.
From my own kitchen adventures, I’ve learned that keeping the pears just firm enough gives you that perfect bite—soft but not mushy. Also, I like to prepare the filling while the oven preheats; it’s a little trick I picked up when time was tight with the kids running around.
