  • 4 medium potatoes, thinly sliced

  • 2 carrots, sliced
  • 1 can (15 ounces) of diced tomatoes
  • 1 can (10 ounces) of tomato soup
  • 1 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 1 cup shredded cheese (cheddar or your choice)

Substitution suggestions: If you’re out of ground beef, ground turkey or plant-based meat alternatives work beautifully. And if carrots aren’t your thing, swap them for bell peppers or zucchini for a different twist.

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish to prevent sticking.
  2. In a skillet over medium heat, cook the ground beef until browned. Drain off any excess fat and set aside.
  3. Layer the thinly sliced potatoes evenly on the bottom of the prepared baking dish.
  4. Scatter the chopped onion and sliced carrots over the potatoes, followed by the cooked ground beef.
  5. In a bowl, combine the diced tomatoes, tomato soup, water, salt, pepper, and Worcestershire sauce. Pour this mixture over the layered ingredients in the baking dish.
