Here’s what you’ll need to create this delicious, comforting casserole:
- 1 pound ground beef
- 4 medium potatoes, thinly sliced
- 1 onion, chopped
- 2 carrots, sliced
- 1 can (15 ounces) of diced tomatoes
- 1 can (10 ounces) of tomato soup
- 1 cup water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Worcestershire sauce
- 1 cup shredded cheese (cheddar or your choice)
Substitution suggestions: If you’re out of ground beef, ground turkey or plant-based meat alternatives work beautifully. And if carrots aren’t your thing, swap them for bell peppers or zucchini for a different twist.
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish to prevent sticking.
- In a skillet over medium heat, cook the ground beef until browned. Drain off any excess fat and set aside.
- Layer the thinly sliced potatoes evenly on the bottom of the prepared baking dish.
- Scatter the chopped onion and sliced carrots over the potatoes, followed by the cooked ground beef.
- In a bowl, combine the diced tomatoes, tomato soup, water, salt, pepper, and Worcestershire sauce. Pour this mixture over the layered ingredients in the baking dish.
- Cover the dish tightly with foil and bake in the preheated oven for about 1 hour, or until the potatoes are tender.
- Remove the foil, sprinkle the shredded cheese over the top, and bake uncovered for an additional 10-15 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving, allowing the flavors to meld together beautifully.
