Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 1/4 cup olive oil
- 2 tablespoons honey
- 4 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
You can substitute honey with maple syrup for a slightly different flavor or use fresh rosemary instead of Italian seasoning if you have some on hand. This recipe is flexible, just like those late dinners growing up where improvisation was key!
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together balsamic vinegar, olive oil, honey, minced garlic, and Italian seasoning.
- Season the chicken breasts with salt and pepper on both sides.
- In a baking dish, arrange the chicken breasts in a single layer. Pour the balsamic mixture over the chicken, ensuring each piece is well coated.
- Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Once cooked, let the chicken rest for 5 minutes before serving. Garnish with fresh basil if desired.
Cooking tip: Use a meat thermometer to avoid overcooking. This little gadget has saved many a dinner in my household, ensuring juicy, tender chicken every time.
