- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 cup Greek yogurt
- 1/4 cup mayonnaise
- 1 tablespoon sriracha sauce (or more for extra heat)
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon garlic powder
- 1 cup cooked rice (white or brown, your choice)
- 1 cup broccoli florets, steamed
- Salt and pepper to taste
Feel free to substitute Greek yogurt with sour cream if that’s what you have on hand. The magic lies in the combination of flavors, not perfection!
Instructions
- In a large skillet over medium-high heat, season the chicken pieces with salt and pepper and cook until browned and cooked through, about 5-7 minutes.
- Meanwhile, in a small bowl, whisk together Greek yogurt, mayonnaise, sriracha, honey, rice vinegar, and garlic powder until smooth.
- Once the chicken is cooked, reduce the heat to low and pour the creamy sauce over the chicken. Stir to coat the chicken evenly and let it simmer for 2-3 minutes until heated through.
- To assemble the bowls, divide the cooked rice and steamed broccoli among serving bowls. Top with the creamy chicken mixture.
- Garnish with extra sriracha or a sprinkle of sesame seeds for a little extra flair, if desired.
