Ingredients
Scale
Gather these ingredients, and you’ll be ready to whip up this delightful meal:
- 1 pound of ground beef
- 2 large sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- Salt and pepper, to taste
- 2 cups fresh spinach
- 1 cup cooked quinoa
- 1 avocado, sliced
- Lime wedges, for serving
If you don’t have quinoa, feel free to substitute it with brown rice or farro for a different texture. And for a vegetarian twist, you can swap the beef with a plant-based alternative.
Instructions
Follow these steps to bring this dish to life:
- Heat the olive oil in a large skillet over medium heat. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they are tender and slightly caramelized.
- Push the sweet potatoes to the side of the skillet and add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.
- Increase the heat to medium-high and add the ground beef to the skillet. Cook, breaking it up with a wooden spoon until it’s browned and cooked through, about 8-10 minutes.
- Season the mixture with smoked paprika, cumin, salt, and pepper. Stir well to combine, letting the spices toast for a minute.
- Add the spinach to the skillet and cook until wilted, about 2 minutes.
- Remove the skillet from heat and stir in the cooked quinoa until everything is well mixed.
- Serve the mixture in bowls. Top with sliced avocado and a squeeze of lime juice for an extra burst of flavor.
Pro Tip: For a little extra crunch, you can sprinkle some toasted pumpkin seeds on top.
