- 1 sponge cake, cut into cubes (store-bought or homemade)
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup mascarpone cheese
- 2 tablespoons berry liqueur (optional, for adults)
Feel free to substitute the mascarpone with cream cheese for a tangier twist, and use any berries you have on hand. The key is freshness!
Instructions
- Begin by preparing your sponge cake, cutting it into 1-inch cubes. Set aside.
- In a large bowl, whip the heavy cream with the sugar and vanilla extract until soft peaks form, about 3-4 minutes.
- Gently fold the mascarpone cheese into the whipped cream until smooth and well combined.
- Layer half of the cake cubes at the bottom of a trifle dish or a large glass bowl.
- Sprinkle a tablespoon of berry liqueur over the cake cubes if using.
- Next, layer half of the berries over the cake cubes.
- Spread half of the cream mixture over the berries, smoothing it out with a spatula.
- Repeat the layers with the remaining ingredients, finishing with a layer of cream.
- Top with a few whole berries for decoration. Chill in the refrigerator for at least 1 hour before serving.
