- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 2 cups chicken or vegetable broth
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional for a bit of heat)
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Feel free to swap the chicken broth for vegetable broth to make it vegetarian, or add cooked chicken or shrimp for extra protein.
Instructions
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Stir in the orzo, allowing it to toast slightly in the oil for about 2 minutes.
- Add the diced tomatoes, broth, oregano, red pepper flakes, salt, and pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 15 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.
- Remove from heat and stir in the Parmesan cheese. Garnish with fresh basil leaves before serving.
