- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 large eggs
- 3/4 cup milk
- 1 teaspoon vanilla extract
- 2 large apples, peeled, cored, and diced
- Vegetable oil for frying
- Powdered sugar for dusting
If you’re out of milk, don’t worry! You can substitute it with almond milk or even water in a pinch. And if cinnamon isn’t your jam, try nutmeg or allspice for a different twist.
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, beat the eggs, then add the milk and vanilla extract.
- Combine the wet and dry ingredients, stirring until just mixed. Lumps are okay!
- Fold in the diced apples gently.
- Heat the vegetable oil in a deep pan to 350°F. If you don’t have a thermometer, test with a small piece of batter—it should bubble and rise to the surface.
- Spoon the batter into the hot oil, frying a few fritters at a time. Cook for 2-3 minutes on each side until golden brown.
- Remove the fritters with a slotted spoon and drain on paper towels.
- Dust with powdered sugar before serving warm.
Remember, the key is to not overcrowd the pan, which can lower the oil temperature and result in greasy fritters. Keep an eye on them, and you’ll have crispy perfection!
