- 3 cups corn (fresh, frozen, or canned)
- 4 cups chicken or vegetable broth

Instructions
Cooking doesn’t have to be intimidating, trust me. Here’s how you can whip up this chowder in no time:
- Start by seasoning the shrimp with Cajun seasoning. Make sure to coat them well; this is where the flavor comes from!
- In a large pot, heat the olive oil over medium-high heat. Add the seasoned shrimp and cook for about 2-3 minutes until they turn pink and slightly charred. Remove the shrimp from the pot and set aside.
- In the same pot, add the diced onion and bell pepper. Sauté for about 5 minutes until they’re soft and fragrant.
- Add the minced garlic and diced potato to the pot, stirring for another minute until the garlic is aromatic.
- Pour in the chicken or vegetable broth and bring to a simmer. Cook for about 10 minutes or until the potatoes are tender.
- Stir in the corn (if using frozen, no need to thaw) and the heavy cream. Let it simmer for another 5 minutes.
- Add the shrimp back into the pot. Stir gently to combine and heat through for an additional 2-3 minutes.
- Season with salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.
