Ingredients
Scale
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup buttermilk (or substitute with 3/4 cup milk + 1 tablespoon lemon juice)
- 1 cup fresh or frozen blueberries
- 1 teaspoon vanilla extract
- Optional: 1 tablespoon coarse sugar for sprinkling on top
Instructions
- Preheat your oven to 425°F and line a baking sheet with parchment paper. This step is your best friend when it comes to easy cleanup—a lifesaver for busy moms like me.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar. It’s these simple ingredients that make the foundation of our biscuits.
- Add the cold, cubed butter to the dry ingredients. Using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs. Remember, it’s okay if it’s a bit messy. That’s what makes it homemade!
- Pour in the buttermilk and vanilla extract, and gently mix until just combined. Overmixing is the enemy of a tender biscuit.
- Carefully fold in the blueberries. If using frozen blueberries, don’t thaw them to prevent them from bleeding too much into the dough.
- Turn the dough out onto a lightly floured surface and knead just a few times to bring it together. Pat into a rectangle about 1-inch thick.
- Using a biscuit cutter or a glass, cut out rounds and place them on the prepared baking sheet. Gather remaining dough scraps, reshape, and cut again until all dough is used.
- Sprinkle the tops with coarse sugar if you like a little extra sweetness and crunch.
- Bake for 15-18 minutes, or until the biscuits are golden brown on top. That warm smell filling your kitchen? That’s the smell of love and comfort.
- Allow to cool slightly before serving. Enjoy the fruits of your labor with a pat of butter or a drizzle of honey.
