If you don’t have cream cheese on hand, Greek yogurt alone can work, though it won’t be quite as creamy. For a vegan twist, swap cream cheese and Greek yogurt with coconut cream or a dairy-free cream cheese alternative. I’ve made these with both and honestly, each version brings its own charm.
Instructions
- In a large bowl, combine the rolled oats, vanilla protein powder, dried blueberries, chia seeds (if using), and a pinch of salt. Give it a good stir to distribute everything evenly.
- In a separate bowl, mix the softened cream cheese, Greek yogurt, honey (or maple syrup), and vanilla extract until smooth and creamy. This creamy mixture is the heart of the cheesecake flavor, so take your time getting it just right.
- Add the wet mixture to the dry ingredients and stir thoroughly. It might feel a bit sticky—that’s exactly what you want. If the mixture feels too dry, add a teaspoon of water or milk of choice, one at a time, until it holds together well.
- Using your hands (or a small cookie scoop), form the mixture into bite-sized balls, about 1 inch in diameter. I find it easiest to wet my hands slightly to prevent sticking.
- Place the bites on a parchment-lined tray or plate. Refrigerate for at least 30 minutes to firm up. This step is key to getting that perfect, sliceable texture and letting the flavors meld.
- Once chilled, enjoy immediately or store in an airtight container in the fridge.
