Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin with butter or non-stick spray. I like to use butter here because it adds a little extra flavor and helps with browning.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In a separate bowl, beat the egg and then whisk in the buttermilk, melted butter, vanilla extract, and lemon zest. This mix brings that bright, fresh flavor that reminds me of summer mornings spent in my mom’s kitchen.
- Pour the wet ingredients into the dry ingredients and gently fold together with a spatula. Be careful not to overmix—the batter should be a little lumpy. Over-mixing can make pancakes tough, and we want these bites tender and fluffy.
- Fold in the blueberries carefully to avoid crushing them. I’ve learned from experience that frozen blueberries can bleed a bit, so it’s best to keep them frozen until just before folding in.

- Allow the bites to cool in the pan for 5 minutes before transferring to a wire rack. This step helps them firm up and makes them easier to handle.
