- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar

- 1 cup fresh or frozen blueberries
- 2 tablespoons water
- 2 tablespoons granulated sugar
You can substitute graham cracker crumbs with digestive biscuits if you prefer, and add a pinch of cinnamon for a little extra warmth. If fresh blueberries aren’t in season, frozen ones work beautifully here, just like how my mom would make do with whatever was available.
Instructions
- Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan lightly with butter.
- In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared pan to form the crust. Set aside.
- In a saucepan over medium heat, combine blueberries, water, and 2 tablespoons sugar. Cook until the blueberries soften and the mixture thickens, about 5-7 minutes. Let it cool slightly before blending into a smooth puree.
- In a large mixing bowl, beat the cream cheese until smooth and creamy. Add 1 cup sugar and vanilla extract, beating until combined.
- Add eggs, one at a time, beating after each addition just until combined. Be careful not to overmix, as my dad would always remind me, “Less is more when it comes to eggs!”
- Pour half of the cream cheese mixture over the crust. Spoon half of the blueberry puree in small dollops over the batter. Use a knife to gently swirl the blueberry mixture into the cheesecake batter.
- Repeat with the remaining cream cheese mixture and blueberry puree.
- Bake for 50-60 minutes, or until the center is set and the top is lightly golden. Turn off the oven and allow the cheesecake to cool in the oven with the door slightly ajar for about an hour.
- Refrigerate for at least 4 hours, or overnight for best results. This patience is a virtue my mom instilled in me—it’s worth the wait!
