  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blackberries
  • 1/2 cup bourbon
  • 1/4 cup honey
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper.
  2. In a large ovenproof skillet, heat olive oil over medium-high heat. Add the chicken and sear on both sides until golden, about 3-4 minutes per side.
  3. Remove chicken from the skillet and set aside. In the same skillet, add garlic and sauté for about 30 seconds until fragrant.
  4. Pour the bourbon into the skillet, scraping up any browned bits from the bottom. Let it simmer for 2 minutes.
  5. Add blackberries, honey, and balsamic vinegar to the skillet. Stir and let simmer until the blackberries start to break down, about 5 minutes.
  6. Return the chicken to the skillet, spooning some sauce over each piece. Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken is cooked through.
  7. Garnish with fresh thyme before serving, if desired.
