The key to this dish lies in selecting the right ingredients, just as my mom always did with her pantry magic. Fresh, juicy blackberries and a decent bourbon are non-negotiable here—they’re the stars of the show.
- 4 boneless, skinless chicken breasts
- 1 cup fresh blackberries
- 1/2 cup bourbon
- 1/4 cup honey
- 1 tablespoon balsamic vinegar
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh thyme for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper.
- In a large ovenproof skillet, heat olive oil over medium-high heat. Add the chicken and sear on both sides until golden, about 3-4 minutes per side.
- Remove chicken from the skillet and set aside. In the same skillet, add garlic and sauté for about 30 seconds until fragrant.
- Pour the bourbon into the skillet, scraping up any browned bits from the bottom. Let it simmer for 2 minutes.
- Add blackberries, honey, and balsamic vinegar to the skillet. Stir and let simmer until the blackberries start to break down, about 5 minutes.
- Return the chicken to the skillet, spooning some sauce over each piece. Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken is cooked through.
- Garnish with fresh thyme before serving, if desired.
