- 4 medium russet potatoes, peeled and cubed
- 2 tablespoons butter
- 1/2 cup milk or cream
- 1 package (5.2 oz) Boursin cheese
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Boil the potatoes in salted water until tender, about 15 minutes. Drain and mash with butter, milk, and Boursin cheese until smooth. Season with salt and pepper.
- In a skillet, heat olive oil over medium heat. Season chicken breasts with garlic powder, salt, and pepper, and sear them until golden, about 3-4 minutes per side.
- Transfer the chicken to a baking dish. Spread the mashed potatoes over the chicken, then sprinkle with mozzarella cheese.
- Bake in the oven for 20-25 minutes, until the chicken is cooked through and the cheese is bubbly and golden.
