  • 4 pounds beef short ribs, bone-in
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 3 cups red wine (a good quality one you’d drink)
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 large russet potatoes, peeled and quartered
  • 1/2 cup milk
  • 4 tablespoons butter
  • Salt and pepper, to taste

Feel free to swap the russet potatoes with Yukon Gold for a creamier mash or use chicken broth if you’re out of beef broth. Remember, home cooking is about making it work with what you have!

Instructions

  1. Preheat your oven to 350°F (175°C). Pat the short ribs dry with paper towels and season them generously with salt and pepper.
  2. In a large Dutch oven, heat the olive oil over medium-high heat. Brown the short ribs on all sides, working in batches if necessary, about 10 minutes per batch. Remove them from the pot and set aside.
  3. In the same pot, add the onion and garlic. Sauté until the onion is translucent, about 5 minutes.
  4. Pour in the red wine, scraping the bottom of the pot to release all the flavorful bits. Let it simmer for 5 minutes.
  5. Stir in the beef broth, tomato paste, thyme, and rosemary. Return the short ribs to the pot, ensuring they are submerged in the liquid.
  6. Cover the pot and transfer it to the oven. Braise for 2.5 to 3 hours, or until the meat is fork-tender and falling off the bone.
  7. While the ribs are cooking, prepare the garlic mash. Boil the potatoes in salted water until tender, about 15-20 minutes.
  8. Drain the potatoes and return them to the pot. Add the milk, butter, and minced garlic, mashing until smooth and creamy. Season with salt and pepper to taste.
  9. Once the ribs are done, serve them over a generous helping of garlic mash, drizzling some of the cooking sauce over the top.
