  • 1 to 1 1/2 cups grated Parmesan cheese (you can substitute with Pecorino Romano or a mix of mozzarella and Parmesan for a milder taste)

Quick tip from my kitchen: If you’re out of tapioca flour, cassava flour won’t work the same here because it has a different texture and moisture content. Tapioca is the true magic behind that chewy, airy texture. Also, I like to grate my cheese fresh—it melts better and the flavor is unbeatable.

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. This step is key to prevent sticking and makes cleanup easier—trust me, messy kitchens already have enough to handle.
  2. In a medium saucepan, combine the milk, vegetable oil (or melted butter), and salt. Heat over medium heat until the mixture just begins to boil. You’ll see tiny bubbles around the edges—that’s your cue to take it off the heat.
  3. Immediately, pour the hot milk mixture over the tapioca flour in a large mixing bowl. Stir vigorously with a wooden spoon until you get a sticky, glue-like dough. It might look odd at first, but don’t worry—that’s exactly what you want.
  4. Let the dough cool for about 5 minutes. Meanwhile, crack the eggs into a small bowl and beat them lightly. This cooling step prevents the eggs from cooking when added.
  5. Add the eggs to the dough one at a time, mixing well after each addition. The dough will become glossy and slightly elastic.
  6. Fold in the grated cheese until evenly distributed. At this point, your kitchen will smell amazing—cheesy and warm, just like my dad’s lentil pots back in the day.
  7. Using a tablespoon or a small cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. They won’t spread much, so you don’t need to worry about crowding.
  8. Bake for 20 to 25 minutes, or until the tops are golden and the cheese breads have puffed up like little pillows. The smell will let you know they’re ready before you even look.
