Here’s what you’ll need to create this delightful dish. Most of these ingredients are probably already in your pantry, ready to transform into something magical.
- 4 medium sweet potatoes
- 2 cups cooked, shredded chicken (rotisserie chicken works great for a shortcut)
- 1/2 cup buffalo sauce
- 1/4 cup ranch dressing
- 1 cup shredded cheddar cheese
- 2 tablespoons butter
- Salt and pepper to taste
- 2 green onions, sliced
- Optional: Blue cheese crumbles for garnish
Feel free to swap ranch dressing with blue cheese dressing if that’s your preference. And if cheddar isn’t your thing, mozzarella makes a great substitute!
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- Wash the sweet potatoes thoroughly, then pierce each one several times with a fork. Place them on the prepared baking sheet.
- Bake for 45-60 minutes, or until the sweet potatoes are tender when pierced with a fork.
- While the sweet potatoes are baking, mix the shredded chicken with buffalo sauce in a bowl, ensuring every piece is well coated.
- Once the sweet potatoes are done, remove them from the oven and allow them to cool slightly. Keep the oven on.
- Cut each sweet potato in half lengthwise and scoop out some of the flesh, leaving a small border around the edge.
- In a saucepan over medium heat, melt the butter. Add the scooped-out sweet potato flesh, chicken mixture, and ranch dressing. Stir until well combined and heated through.
- Spoon the buffalo chicken mixture back into the sweet potato skins, mounding it on top.
- Sprinkle cheddar cheese over each filled potato half, then return them to the oven for 5-10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with sliced green onions and optional blue cheese crumbles.
