Here’s what you’ll need to create this delightful dish. Most of these ingredients are probably already in your pantry, ready to transform into something magical.

  • 4 medium sweet potatoes
  • 2 cups cooked, shredded chicken (rotisserie chicken works great for a shortcut)
  • 1/2 cup buffalo sauce
  • 1/4 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 2 green onions, sliced
  • Optional: Blue cheese crumbles for garnish

Feel free to swap ranch dressing with blue cheese dressing if that’s your preference. And if cheddar isn’t your thing, mozzarella makes a great substitute!

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Wash the sweet potatoes thoroughly, then pierce each one several times with a fork. Place them on the prepared baking sheet.
  3. Bake for 45-60 minutes, or until the sweet potatoes are tender when pierced with a fork.
  4. While the sweet potatoes are baking, mix the shredded chicken with buffalo sauce in a bowl, ensuring every piece is well coated.
  5. Once the sweet potatoes are done, remove them from the oven and allow them to cool slightly. Keep the oven on.
  6. Cut each sweet potato in half lengthwise and scoop out some of the flesh, leaving a small border around the edge.
  7. In a saucepan over medium heat, melt the butter. Add the scooped-out sweet potato flesh, chicken mixture, and ranch dressing. Stir until well combined and heated through.
  8. Spoon the buffalo chicken mixture back into the sweet potato skins, mounding it on top.
  9. Sprinkle cheddar cheese over each filled potato half, then return them to the oven for 5-10 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and garnish with sliced green onions and optional blue cheese crumbles.
