  • 1 can (15 ounces) diced tomatoes with green chilies
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 4 hamburger buns, toasted
  • Optional toppings: sliced pickles, shredded cheese, or coleslaw

Feel free to swap out the ground chicken for turkey or even a plant-based option if you’re looking for something different. And if you want to spice it up even more, add a few dashes of hot sauce to the mix!

Instructions

  1. In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and bell pepper, sautéing until they are soft, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the ground chicken, breaking it apart with a wooden spoon. Cook until the chicken is no longer pink, about 6-8 minutes.
  4. Once the chicken is cooked through, sprinkle in the Cajun seasoning. Stir well to coat the chicken evenly.
  5. Add the can of diced tomatoes (with juices), tomato paste, Worcestershire sauce, salt, and pepper. Stir everything together and let it simmer for about 10 minutes, allowing the flavors to meld.
  6. While the mixture simmers, toast your hamburger buns until golden brown.
  7. Once the mixture is thickened and bubbling, taste and adjust seasoning if needed. Serve the chicken mixture piled high on the toasted buns.
  8. Top with your choice of sliced pickles, cheese, or coleslaw, and enjoy!
