- 1 pound boneless, skinless chicken breasts, sliced into strips
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning (store-bought or homemade)
- 3 large sweet bell peppers (red, yellow, and green), sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
If you can’t find Cajun seasoning or want to make your own, combine paprika, cayenne pepper, garlic powder, onion powder, dried oregano, and thyme. Adjust the heat to your liking!
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken strips and sprinkle with Cajun seasoning, salt, and pepper. Cook for 5-7 minutes until the chicken is browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the sliced onions and garlic. Sauté for about 2 minutes until they start to soften and become fragrant.
- Add the sliced bell peppers to the skillet. Cook for another 5 minutes, stirring occasionally, until they are tender but still crisp.
- Return the chicken to the skillet with the vegetables. Squeeze the lemon juice over the top, stirring everything together to coat well.
- Cook for an additional 2-3 minutes to heat through. Taste and adjust seasoning if needed.
- Garnish with fresh parsley before serving.
