  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 6 cups chicken broth
  • 1 pound andouille sausage, sliced
  • 3 cups cooked white rice
  • 2 green onions, sliced, for garnish

If you can’t find andouille sausage, feel free to substitute with smoked sausage or even a plant-based option for a vegetarian twist. The beauty of this recipe, much like my mom’s kitchen magic, is its adaptability.

Instructions

  1. Rinse and drain the soaked red beans. Set aside.

  5. Once the beans are tender, add the sliced andouille sausage. Simmer for another 30 minutes, allowing the flavors to meld together.
  6. Remove the bay leaf and taste for seasoning. Adjust salt and pepper as needed.
  7. Serve the beans over a bed of cooked white rice, garnished with sliced green onions.
