- 1 pound dried red beans, soaked overnight
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 6 cups chicken broth
- 1 pound andouille sausage, sliced
- 3 cups cooked white rice
- 2 green onions, sliced, for garnish
If you can’t find andouille sausage, feel free to substitute with smoked sausage or even a plant-based option for a vegetarian twist. The beauty of this recipe, much like my mom’s kitchen magic, is its adaptability.
Instructions
- Rinse and drain the soaked red beans. Set aside.
- In a large pot, heat olive oil over medium heat. Add the onion, bell pepper, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
- Add the garlic, smoked paprika, thyme, cayenne pepper, salt, and black pepper. Stir for about 1 minute until fragrant.
- Add the red beans, bay leaf, and chicken broth. Bring to a boil, then reduce heat to low and cover. Let simmer for about 2 hours, stirring occasionally, until the beans are tender.
- Once the beans are tender, add the sliced andouille sausage. Simmer for another 30 minutes, allowing the flavors to meld together.
- Remove the bay leaf and taste for seasoning. Adjust salt and pepper as needed.
- Serve the beans over a bed of cooked white rice, garnished with sliced green onions.
