- 2 cups of cooked jasmine rice (preferably chilled overnight)
- 1 pound of shrimp, peeled and deveined
- 2 tablespoons of Cajun seasoning
- 2 tablespoons of olive oil
- 1 large onion, chopped
- 1 bell pepper, diced (any color)
- 3 cloves of garlic, minced
- 2 eggs, beaten
- 1 cup of frozen peas and carrots, thawed
- 3 tablespoons of soy sauce
- 2 green onions, chopped
- Salt and pepper to taste
If you’re out of Cajun seasoning or prefer a milder flavor, feel free to substitute with a mix of paprika, garlic powder, and a pinch of cayenne pepper.
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp and sprinkle with Cajun seasoning. Cook for 2-3 minutes on each side until pink and opaque, then remove from the skillet and set aside.
- In the same skillet, add the remaining olive oil. Toss in the onion and bell pepper, sautéing until they’re soft and the onion is translucent, about 5 minutes.
- Stir in the garlic and cook for another minute until fragrant.
- Push the veggies to one side of the skillet and pour the beaten eggs into the other side. Scramble them until fully cooked, then mix everything together.
- Add the cooked rice, peas, and carrots. Pour over the soy sauce, stirring to combine everything thoroughly. Cook for another 3-4 minutes until heated through.
- Return the shrimp to the skillet and toss everything together. Cook for an additional minute to ensure everything is well-mixed and hot.
- Finish with a sprinkle of chopped green onions and adjust the seasoning with salt and pepper to taste.
