  • 2 cups of cooked jasmine rice (preferably chilled overnight)
  • 1 pound of shrimp, peeled and deveined
  • 2 tablespoons of Cajun seasoning
  • 2 tablespoons of olive oil
  • 1 large onion, chopped
  • 1 bell pepper, diced (any color)
  • 3 cloves of garlic, minced
  • 2 eggs, beaten
  • 1 cup of frozen peas and carrots, thawed
  • 3 tablespoons of soy sauce
  • 2 green onions, chopped
  • Salt and pepper to taste

If you’re out of Cajun seasoning or prefer a milder flavor, feel free to substitute with a mix of paprika, garlic powder, and a pinch of cayenne pepper.

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp and sprinkle with Cajun seasoning. Cook for 2-3 minutes on each side until pink and opaque, then remove from the skillet and set aside.
  2. In the same skillet, add the remaining olive oil. Toss in the onion and bell pepper, sautéing until they’re soft and the onion is translucent, about 5 minutes.
  3. Stir in the garlic and cook for another minute until fragrant.
  4. Push the veggies to one side of the skillet and pour the beaten eggs into the other side. Scramble them until fully cooked, then mix everything together.
  5. Add the cooked rice, peas, and carrots. Pour over the soy sauce, stirring to combine everything thoroughly. Cook for another 3-4 minutes until heated through.
  6. Return the shrimp to the skillet and toss everything together. Cook for an additional minute to ensure everything is well-mixed and hot.
  7. Finish with a sprinkle of chopped green onions and adjust the seasoning with salt and pepper to taste.
