Indulge in Decadence: The Ultimate Caramel Brownie Cheesecake Delight

Learn how to make delicious Caramel Brownie Cheesecake. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

Before we get our hands dirty, let’s gather everything we need. You probably have some of these ingredients in your pantry already, which is a huge win for busy cooks like me!

  • 1 cup unsalted butter (2 sticks)
  • 2 cups granulated sugar
  • 1 cup brown sugar, packed
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 16 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for cheesecake)
  • 1 cup caramel sauce (store-bought or homemade)

Substitution tips: If you’re out of sour cream, Greek yogurt works beautifully as a swap. Don’t have caramel sauce on hand? You can easily make a quick version by melting some sugar into a pan until it turns golden, then adding a bit of cream!

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper for easy removal.
  2. In a large mixing bowl, melt the butter. Once melted, stir in granulated sugar and brown sugar until well combined.
  3. Add the eggs, one at a time, mixing well after each addition. Then stir in 1 teaspoon of vanilla extract.
  4. Sift in the flour, cocoa powder, and salt. Mix until just combined—don’t overmix!
  5. Pour half of the brownie batter into the prepared pan and spread it evenly. Bake for 20 minutes. Remove from the oven and let it cool slightly.
  6. While the brownie base is cooling, prepare the cheesecake layer. In a separate bowl, beat the cream cheese until smooth and creamy.
  7. Add the sour cream, powdered sugar, and 1 teaspoon of vanilla extract to the cream cheese. Mix until fully integrated and fluffy.
  8. Spread the cheesecake mixture over the cooled brownie layer. Pour the remaining brownie batter on top of the cheesecake layer, spreading it gently.
  9. Bake for another 40-45 minutes, or until the center is set but still slightly jiggly. It will firm up as it cools.
  10. Remove from the oven and let it cool completely in the pan. Once cooled, refrigerate for at least 4 hours (or overnight!) for the best texture.
  11. Before serving, drizzle with caramel sauce. Enjoy with family and friends!

As I’ve learned from countless kitchen adventures, patience is key. Waiting for that cheesecake to chill might feel like torture, but trust me, it’s worth it!
