Ingredients
Scale
- 1 tablespoon olive oil
- 1 pound ground beef (or substitute with ground turkey for a lighter option)
- 1 bell pepper, diced (any color works, but I love the sweetness of red)
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 1 cup beef broth
- 1 package (9 ounces) cheese tortellini
- 1 cup shredded provolone cheese (substitute with mozzarella if preferred)
- Fresh parsley, chopped for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up with a wooden spoon, about 5 minutes.
- Stir in the diced bell pepper and chopped onion. Cook until the vegetables are soft, about 4 minutes. Add garlic and cook for an additional minute until fragrant.
- Season with salt, black pepper, and Worcestershire sauce. Stir to combine all the flavors.
- Pour in the beef broth and bring to a simmer. Add the cheese tortellini, ensuring they are submerged in the liquid.
- Cover the skillet and let it cook for about 8-10 minutes, or until the tortellini are tender and cooked through.
- Uncover and sprinkle shredded provolone cheese over the tortellini. Cover again until the cheese has melted, about 2 minutes.
- Garnish with fresh parsley before serving. Enjoy the cheesy, savory goodness with your family!
