Gathering the ingredients for this Cheesy Bacon Mac & Cheese is part of the fun! Here’s what you’ll need:
- 8 ounces elbow macaroni
- 4 slices of bacon, chopped
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups milk (whole or skim works fine)
- 2 cups shredded sharp cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Optional: breadcrumbs for topping
Need a substitution? If you’re out of elbow macaroni, you can use any pasta shape you have on hand—penne or shells work just as well. And if you’re looking for a lighter version, feel free to swap out the bacon for some sautéed veggies or even cooked chicken!
Instructions
- Start by cooking the elbow macaroni according to the package instructions. Drain and set aside.
- In a large skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon and let it drain on paper towels.
- In the same skillet, drain excess fat, leaving about a tablespoon. Add the butter and melt over medium heat.
- Whisk in the flour and cook for about 1 minute, stirring constantly, until bubbly.
- Slowly add the milk, whisking to avoid lumps. Continue to cook until the mixture thickens, about 3-5 minutes.
- Remove from heat and stir in the cheese until melted and smooth. Add the garlic powder, onion powder, salt, and pepper.
- Fold in the cooked macaroni and half of the crispy bacon until well combined.
- If you like a crunchy topping, transfer the mixture to a greased baking dish, sprinkle breadcrumbs on top, and bake at 350°F for 15 minutes.
- Garnish with the remaining bacon before serving. Enjoy warm!
