- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin

- Salt and pepper, to taste
- 4 large flour tortillas (10-inch works best)
- 2 cups frozen French fries (straight-cut or crinkle-cut)
- 1 1/2 cups shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
- 1/2 cup salsa (store-bought or homemade)
- 1/4 cup sour cream or Greek yogurt
- 2 tablespoons olive oil or vegetable oil
- Optional toppings: chopped cilantro, sliced jalapeños, diced tomatoes, shredded lettuce
Substitution tips: If you’re avoiding beef, ground turkey or plant-based crumbles work well here. For gluten-free tortillas, look for corn or gluten-free wraps. And if frozen fries aren’t your thing, homemade baked fries or even crispy roasted potatoes are great alternatives.
Instructions
- Preheat your oven and cook the frozen fries according to the package instructions until crispy. I usually bake mine at 425°F for about 20-25 minutes, flipping halfway through. This step is key to getting that satisfying crunch inside the burrito.
- While the fries are baking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the chopped onion and sauté for 3-4 minutes until translucent and fragrant.
- Stir in the minced garlic and cook for another 30 seconds—don’t let it burn!
- Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned and no longer pink, about 6-8 minutes.
- Sprinkle in chili powder, cumin, smoked paprika, salt, and pepper. Stir well to combine and cook for 2 more minutes so the spices bloom.
- Remove the beef mixture from heat and set aside.
- Warm the tortillas one at a time in a dry skillet or microwave just until pliable—this makes wrapping easier and prevents tearing.
- Lay a tortilla flat and sprinkle a generous handful of shredded cheese in the center.
- Spoon about 1/4 of the beef mixture over the cheese, then pile on a handful of crispy fries.
- Add a spoonful of salsa and a dollop of sour cream, plus any optional toppings you love.
- Fold the sides of the tortilla over the filling, then roll tightly from the bottom up to form a burrito.
- Repeat with remaining tortillas and filling.
- If you want melty cheese all around, lightly brush the outside of each burrito with oil and toast them seam-side down in a hot skillet for 2-3 minutes per side until golden and crisp.
- Serve immediately while everything is warm and gooey.
