- 8 lasagna noodles
- 2 cups cooked and shredded chicken
- 2 cups Alfredo sauce (store-bought or homemade)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian herbs
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
If you want to switch things up, try using spinach instead of chicken for a vegetarian twist, or add some crushed red pepper flakes for a bit of heat.
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions, then lay them flat on a clean towel to cool.
- In a mixing bowl, combine the shredded chicken, ricotta cheese, 1/2 cup mozzarella, 1/2 cup Parmesan, garlic powder, Italian herbs, nutmeg, salt, and pepper.
- Spread a thin layer of Alfredo sauce on the bottom of a baking dish.
- Spread a portion of the chicken mixture along each lasagna noodle and roll them up tightly.
- Place the rolls seam-side down in the baking dish and cover with remaining Alfredo sauce.
- Sprinkle the rest of the mozzarella and Parmesan on top.
- Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
