Ingredients
- 2 sheets of puff pastry (thawed if frozen, about 8 oz each)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 3 tablespoons unsalted butter, melted
- 2 garlic cloves, finely minced
- 1 tablespoon chopped fresh parsley (or 1 teaspoon dried parsley)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Optional: 1/4 teaspoon red pepper flakes for a little heat
Substitution tips: If you don’t have puff pastry on hand, you can use homemade bread dough or even crescent roll dough, though puff pastry gives that beautiful flaky texture. Feel free to swap mozzarella with cheddar or fontina for a different flavor profile. And if you’re out of fresh parsley, dried works just fine—just use a smaller amount since dried herbs are more concentrated.
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. This is crucial to prevent sticking and to catch any buttery drips—trust me, it saves cleanup time, which is always a win.
- In a small bowl, mix together the melted butter, minced garlic, chopped parsley, salt, pepper, and red pepper flakes if using. This flavorful butter will be brushed between the layers, infusing every bite with garlic-y goodness.
- Roll out one sheet of puff pastry on a lightly floured surface into a rough triangle shape, about 10 inches wide at the base and 12 inches tall. Don’t worry about perfection here; the rustic look adds to the charm.
- Sprinkle half of the mozzarella and Parmesan evenly over this first layer.
- Brush the garlic butter mixture generously over the cheese layer.
- Place the second puff pastry sheet on top, shaping it to match the first layer. Press down gently around the edges to seal.
- Using a sharp knife, trim the edges into a neat triangle, then carefully score a small rectangle at the bottom of the triangle to serve as the tree trunk.
- Starting from the top point of the triangle, cut the dough into strips about 1 inch wide on each side, twisting each strip away from the center twice or thrice to create “branches.” This is the fun part, and yes, it might get a little messy—just like my kitchen always does!
- Brush the entire tree generously with any remaining garlic butter.
- Bake for 20-25 minutes or until the pastry is golden brown and the cheese is bubbling.
- Remove from the oven and let it cool for 5 minutes before serving. This helps the cheese set a bit and makes it easier to pull apart.
One of my favorite memories making this bread is how my kids get involved in twisting the branches. It’s one of those moments where the mess and laughter outweigh the minor kitchen chaos, making it a true home-cooked delight.
