Irresistibly Cheesy Jalapeño Popper Chicken Casserole: A Spicy Comfort Food Delight

Learn how to make delicious Cheesy Jalapeño Popper Chicken Casserole. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

Gathering ingredients is one of my favorite parts of cooking, especially when I know it’ll lead to something delicious. Here’s what you’ll need:

  • 2 cups cooked, shredded chicken (rotisserie chicken works great!)
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced jalapeños (fresh or pickled, depending on your spice preference)
  • 1 cup corn (canned or frozen)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup crushed tortilla chips (for topping)
  • 1/2 cup additional shredded cheese for topping

Feel free to swap out the chicken for cooked turkey or even a plant-based protein if you’re looking for a vegetarian option. Cooking should be flexible and fun!

Instructions

  1. Preheat your oven to 350°F (175°C). This step is crucial, ensuring your casserole bakes evenly.
  2. In a large mixing bowl, combine the softened cream cheese and sour cream. Mix until you have a smooth, creamy base. This is where the magic begins!
  3. Add in the shredded chicken, diced jalapeños, corn, garlic powder, onion powder, salt, and pepper. Stir everything together until well combined. I love this part because it smells so good!
  4. Transfer the mixture into a greased 9×13 inch baking dish, spreading it evenly. Don’t worry if it’s not perfect—remember, home cooking is about love, not perfection.
  5. Sprinkle the crushed tortilla chips over the top, followed by the additional shredded cheese. This gives it that crunchy, cheesy topping that we all crave.
  6. Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden brown. You want to see that beautiful golden crust!
  7. Once done, let it cool for a few minutes before serving. This will help the casserole set a bit and make it easier to serve.

As I stand there waiting for it to cool, I can already hear my kids’ laughter as they dig in. It’s those little moments that make cooking worthwhile.
