Gathering ingredients is one of my favorite parts of cooking, especially when I know it’ll lead to something delicious. Here’s what you’ll need:
- 2 cups cooked, shredded chicken (rotisserie chicken works great!)
- 1 cup cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup diced jalapeños (fresh or pickled, depending on your spice preference)
- 1 cup corn (canned or frozen)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup crushed tortilla chips (for topping)
- 1/2 cup additional shredded cheese for topping
Feel free to swap out the chicken for cooked turkey or even a plant-based protein if you’re looking for a vegetarian option. Cooking should be flexible and fun!
Instructions
- Preheat your oven to 350°F (175°C). This step is crucial, ensuring your casserole bakes evenly.
- In a large mixing bowl, combine the softened cream cheese and sour cream. Mix until you have a smooth, creamy base. This is where the magic begins!
- Add in the shredded chicken, diced jalapeños, corn, garlic powder, onion powder, salt, and pepper. Stir everything together until well combined. I love this part because it smells so good!
- Transfer the mixture into a greased 9×13 inch baking dish, spreading it evenly. Don’t worry if it’s not perfect—remember, home cooking is about love, not perfection.
- Sprinkle the crushed tortilla chips over the top, followed by the additional shredded cheese. This gives it that crunchy, cheesy topping that we all crave.
- Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden brown. You want to see that beautiful golden crust!
- Once done, let it cool for a few minutes before serving. This will help the casserole set a bit and make it easier to serve.
As I stand there waiting for it to cool, I can already hear my kids’ laughter as they dig in. It’s those little moments that make cooking worthwhile.
