- 4 medium potatoes, peeled and diced
- 6 large eggs
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1 tablespoon butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/4 cup chopped green onions for garnish
Instructions
- Start by boiling the diced potatoes in salted water for about 10 minutes, until they are just tender. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the boiled potatoes and cook until they start to turn golden brown, about 5-7 minutes.
- While the potatoes are cooking, whisk together the eggs, milk, salt, and pepper in a bowl.
- Pour the egg mixture over the potatoes in the skillet. Stir gently, cooking until the eggs are just set, about 3-4 minutes.
- Sprinkle the shredded cheese over the top and cover the skillet. Allow the cheese to melt, about 2 minutes.
- Garnish with chopped green onions if using, and serve hot.
