Ingredients
Scale
- 1 loaf of thick Texas bread (about 12 slices)
- 1/2 cup (1 stick) unsalted butter, softened
- 3 cloves garlic, minced (or 1 teaspoon garlic powder for convenience)
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup shredded sharp cheddar cheese
- 2 tablespoons freshly chopped parsley (optional, for garnish)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
If you want to switch things up, feel free to substitute the mozzarella with provolone or Monterey Jack for a different melt and flavor. For a dairy-free version, use vegan butter and dairy-free cheese alternatives—though I’ll admit, it won’t have quite that same nostalgic pull!
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
- In a small bowl, combine the softened butter, minced garlic, salt, and pepper. Mix well until the garlic is evenly distributed throughout the butter.
- Spread a generous layer of the garlic butter mixture on one side of each slice of Texas bread. Don’t be shy here; the butter is what makes this toast shine.
- Place the buttered bread slices on the baking sheet, buttered side up.
- Sprinkle a layer of shredded mozzarella evenly over each slice, then follow with a sprinkle of sharp cheddar. The combination gives you a nice balance of creamy melt and tangy bite.
- Bake the toast in the preheated oven for 10-12 minutes, until the cheese is melted and bubbly, and the edges of the bread are golden and crispy.
- For an extra touch of browning, switch the oven to broil and broil the toast for 1-2 minutes, watching carefully to avoid burning. This step is my secret weapon for that perfect golden crust.
- Remove from the oven, sprinkle with chopped parsley if desired, and let cool for a minute or two before serving. This also helps the cheese set just enough to avoid a molten mess when you bite in.
Whenever I make this, I find it’s a perfect way to engage my kids in the kitchen. They love spreading the garlic butter and sprinkling the cheese. It’s a small moment of calm in our otherwise bustling evenings.
