The key to these cookies lies in selecting quality ingredients that bring out the best flavors. Growing up, my mom always taught me that the simplest ingredients often create the most memorable dishes. Let’s keep that tradition alive with this recipe.
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
If you’re feeling adventurous, try swapping half the peanut butter for almond butter for a unique twist!
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the peanut butter, sugar, egg, and vanilla extract until smooth and well combined.
- Stir in the salt and baking soda until evenly distributed.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
- Press each dough ball gently with a fork in a crisscross pattern to flatten slightly.
- Bake for 10-12 minutes, or until the edges are golden brown. The centers might look slightly underbaked, but they will set as they cool.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
