Ingredients
Scale
- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 large ripe avocado, sliced or diced
- 6 cups chopped Romaine lettuce (about 1 large head)
- ½ cup grated Parmesan cheese
- 1 cup croutons (store-bought or homemade)
- ½ cup Caesar dressing (store-bought or homemade, see tip below)
- 2 tablespoons olive oil, for cooking chicken
- Salt and freshly ground black pepper, to taste
- 1 teaspoon garlic powder (optional, for seasoning chicken)
- Juice of half a lemon (optional, for brightening avocado)
Substitution suggestions: If you want to lighten it up, swap chicken breasts for grilled chicken thighs or even rotisserie chicken from the store for super quick prep. For the avocado, if you’re not a fan or can’t find ripe ones, sliced cucumbers or steamed green beans make nice crunchy alternatives. And if you like things spicy, a dash of hot sauce in the dressing always livens it up.
Instructions
- Start by seasoning your chicken breasts with salt, pepper, and garlic powder. This simple seasoning reminds me of those easy weeknight meals my mom would throw together, no fuss, just flavor.
- Heat the olive oil in a skillet over medium-high heat. Once hot, add the chicken breasts and cook for about 5-6 minutes on each side, or until the internal temperature reaches 165°F. You want a nice golden crust but still juicy inside.
- While the chicken cooks, wash and chop your Romaine lettuce. I like to use a salad spinner here because it saves me from soggy lettuce, especially when the kids want salads later in the week.
- Slice or dice your avocado, then toss it gently with a squeeze of lemon juice to keep it bright and prevent browning. This little trick I picked up from my dad’s kitchen—he always said, “A little acid wakes up the flavors.”
- Once the chicken is cooked, let it rest for a few minutes before slicing it into strips. Resting keeps the juices locked in—trust me, I learned the hard way when I first started cooking for my family!
- In a large bowl, toss the chopped Romaine with the Caesar dressing until evenly coated. This is where you can sneak in extra greens if you have them on hand.
- Add the sliced chicken, avocado, croutons, and grated Parmesan cheese. Give everything a gentle toss, so the avocado stays intact but everything gets a little mingled.
- Serve immediately for the freshest crunch, or if you’re prepping ahead, keep the dressing and avocado separate until ready to eat.
