  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • Chopped green onions or cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded chicken, half of the shredded cheese, garlic powder, onion powder, cumin, and a pinch of salt and pepper. Mix well.
  3. In another bowl, whisk together the sour cream, cream of chicken soup, and chicken broth until smooth.
  4. Spread a thin layer of the sour cream mixture on the bottom of a 9×13-inch baking dish.
  5. Take a tortilla and spoon about 1/4 cup of the chicken mixture into the center. Roll it up tightly and place seam-side down in the baking dish. Repeat for all tortillas.
  6. Once all the tortillas are in the dish, pour the remaining sour cream mixture over the top, spreading it evenly.
  7. Sprinkle the remaining cheese over the top of the enchiladas.
  8. Bake in the preheated oven for 25-30 minutes, or until bubbly and golden on top.
  9. Remove from the oven and let it cool for a few minutes before garnishing with chopped green onions or cilantro.
