Ingredients
Scale
- 1/4 cup olive oil (or avocado oil for a milder taste)
- 3 tablespoons soy sauce (use tamari for gluten-free option)
- 2 tablespoons fresh lemon juice (about 1 lemon)
- 3 cloves garlic, minced (or 1 teaspoon garlic powder if you’re in a pinch)
- 1 tablespoon honey or maple syrup (for a touch of sweetness)
- 1 teaspoon smoked paprika (adds a lovely depth, but regular paprika works too)
- 1/2 teaspoon ground cumin (optional, but it reminds me of my dad’s lentil stews)
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt (adjust based on soy sauce saltiness)
- Fresh herbs like parsley or cilantro for garnish (optional but fresh!)
Instructions
- In a medium bowl, whisk together the olive oil, soy sauce, lemon juice, minced garlic, honey, smoked paprika, cumin, black pepper, and salt until well combined. This is your flavor-packed marinade base.
- Place your chicken pieces (breasts, thighs, or drumsticks) in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure every piece is coated well. I like to use my hands for this—yes, messy counters are part of the process!
- Seal the bag or cover the dish tightly with plastic wrap. Refrigerate for at least 30 minutes, but if you have time, aim for 2 to 4 hours. I’ve marinated chicken overnight when life got hectic, and it still came out tender and juicy—no complaints from my picky eaters.
- When ready to cook, remove chicken from marinade, letting excess drip off. Discard leftover marinade.
- Cook chicken over medium-high heat on a grill, stovetop grill pan, or skillet for about 6-8 minutes per side, depending on thickness. Look for a golden-brown crust and an internal temperature of 165°F. If baking, preheat oven to 400°F and bake for 20-25 minutes.
- Once cooked, let chicken rest for a few minutes before slicing. This step is key to keeping it juicy—something I learned the hard way during early home cooking attempts!
- Garnish with fresh herbs if desired and serve immediately.
