Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon cayenne pepper (optional for a kick)
- Juice of 1 lemon
Feel free to swap the cayenne pepper with smoked paprika if you prefer a milder taste. And if fresh herbs are calling your name, go ahead and use them—just double the amount as they’re less concentrated than dried herbs.
Instructions
- Preheat your oven to 375°F. While it heats, grab a baking dish and lightly grease it with olive oil.
- In a small bowl, mix together the salt, black pepper, paprika, garlic powder, onion powder, oregano, thyme, rosemary, and cayenne pepper (if using).
- Pat the chicken breasts dry with paper towels. This helps the spices adhere better. Trust me, I’ve learned the hard way that skipping this step makes a world of difference.
- Rub the olive oil over the chicken breasts, then evenly sprinkle the spice mixture over them, pressing gently to ensure the flavors stick.
- Place the seasoned chicken in the prepared baking dish and drizzle with lemon juice. This not only adds zest but also helps keep the chicken juicy.
- Bake for 25-30 minutes, or until the chicken is cooked through and juices run clear. For me, this is about the time I sneak a taste test, just to be sure.
- Remove from the oven and let rest for 5 minutes before serving. This allows the juices to redistribute, making for tender bites every time.
