- 1 pound large shrimp, peeled and deveined (tails on or off, your choice)
- 2 tablespoons olive oil
- 1–2 chipotle peppers in adobo sauce, finely chopped (adjust for heat preference)
- 1 tablespoon adobo sauce (from the chipotle pepper can)
- 2 cloves garlic, minced
- 1 tablespoon fresh lime juice (about half a lime)
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- Optional: 1 teaspoon honey or maple syrup for a touch of sweetness
Substitution tips: If you don’t have chipotle peppers in adobo, you can swap for 1 teaspoon chipotle chili powder plus a splash of tomato paste. For olive oil, avocado oil or any neutral oil works just fine. And if lime isn’t your thing, a splash of apple cider vinegar will brighten the marinade nicely.
Instructions
- Start by mixing your marinade. In a medium bowl, combine olive oil, chopped chipotle peppers, adobo sauce, minced garlic, lime juice, cumin, smoked paprika, salt, pepper, and honey or maple syrup if using. Stir until well blended.
- Add the peeled and deveined shrimp to the bowl and toss them gently in the marinade until every piece is coated. Cover and refrigerate for at least 20 minutes, but no longer than 1 hour to keep the shrimp tender.
- Preheat your grill to medium-high heat (about 400°F). If you don’t have a grill, a grill pan or cast-iron skillet on the stove works beautifully too.
- Thread the shrimp onto skewers (if using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning). This makes flipping easier and keeps things neat.
- Place the shrimp on the grill and cook for about 2-3 minutes per side, until they turn pink and develop those lovely char marks. Be careful not to overcook—shrimp cook fast and get rubbery if left too long.
- Remove shrimp from the grill and let them rest for a minute or two. This is a good time to peek into the kitchen chaos and maybe grab a glass of water (or wine, no judgment here!).
- Serve immediately with your favorite sides or toss into a salad, taco, or grain bowl. The smoky, spicy flavor pairs perfectly with bright, fresh accompaniments.
