Ingredients
Scale
- 2 large boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon chipotle powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup ranch dressing
- 1 can black beans, drained and rinsed
- 1 cup cooked white rice
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1 avocado, sliced
- 1 lime, cut into wedges
- Fresh cilantro for garnish (optional)
Instructions
- Start by marinating the chicken. In a small bowl, mix together the olive oil, chipotle powder, garlic powder, onion powder, salt, and pepper. Coat the chicken breasts with this mixture and let them marinate for at least 30 minutes in the refrigerator. This step is crucial for infusing the chicken with flavor.
- Preheat your grill to medium-high heat. Once hot, add the marinated chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked. The chicken should have nice grill marks and an internal temperature of 165°F.
- While the chicken is grilling, warm up the tortillas on a skillet or in the microwave. Warming them makes them more pliable and easier to roll.
- Once the chicken is done, let it rest for a few minutes, then slice it into thin strips.
- Assemble the burritos by placing a portion of chicken, black beans, rice, and cheese in the center of each tortilla. Drizzle generously with ranch dressing and top with avocado slices.
- Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom. Secure with a toothpick if necessary.
- Serve with lime wedges and a sprinkle of fresh cilantro for a burst of freshness.
