If you’re missing an ingredient or two, don’t worry! You can substitute granulated sugar with coconut sugar for a deeper flavor. No semisweet chocolate chips? Dark chocolate chunks work wonderfully too. It’s all about making it work with what you have and embracing the creativity of home cooking.
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the semisweet chocolate chips using a spatula or wooden spoon.
- Drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Remember, the secret to these cookies is not overbaking them. They should be slightly undercooked in the center when you remove them from the oven, as they’ll continue to firm up as they cool.
