- 1 cup ricotta cheese
- 1/2 cup mascarpone cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
- 12 sheets phyllo dough
- 1/4 cup melted butter
- 1/4 cup chopped pistachios (optional)
- 1 tablespoon confectioners’ sugar for dusting
Substitutions? Sure! You can swap mascarpone with cream cheese if needed, and use crushed almonds instead of pistachios for a nutty crunch.
Instructions
- Preheat your oven to 350°F and prepare a 9×13-inch baking dish with non-stick spray.
- In a bowl, mix ricotta, mascarpone, powdered sugar, and vanilla until smooth. Stir in chocolate chips.
- Lay a sheet of phyllo dough in the baking dish and brush with melted butter. Repeat with 6 more sheets.
- Spread half of the cheese mixture over the phyllo layers.
- Layer 5 more sheets of phyllo, brushing each with butter. Spread remaining cheese mixture on top.
- Top with remaining phyllo sheets, brushing each with butter. Score the top layer into squares.
- Bake for 25-30 minutes until golden brown. Let cool slightly before slicing.
- Dust with confectioners’ sugar and sprinkle with pistachios before serving.
