  • 8 ounces of rotini pasta
  • 1 cup cooked chicken breast, cubed
  • 1 cup cherry tomatoes, halved

  • 1/2 cup shredded lettuce
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup cheddar cheese, cubed
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water to stop the cooking process.
