The key to this dish lies in selecting the right ingredients that balance flavor and texture, just like my dad’s hearty lentil pots.
- 8 ounces of rotini pasta
- 1 cup cooked chicken breast, cubed
- 1 cup cherry tomatoes, halved
- 1/2 cup cooked bacon, crumbled
- 1/2 cup shredded lettuce
- 1/4 cup red onion, thinly sliced
- 1/2 cup cheddar cheese, cubed
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse under cold water to stop the cooking process.
- In a large bowl, combine the cubed chicken, cherry tomatoes, bacon, lettuce, red onion, and cheddar cheese.
- In a small bowl, whisk together the mayonnaise, Dijon mustard, red wine vinegar, salt, and pepper until smooth.
- Add the cooked pasta to the large bowl with the other ingredients.
- Pour the dressing over the salad ingredients and toss everything together until well coated.
- Serve immediately or refrigerate for up to an hour to let the flavors meld together.
