Ingredients
Scale
Let’s keep it simple and straightforward, just like my mom would. Here’s what you’ll need to make these wings:
- 2 pounds chicken wings, split at joints and tips discarded
- 1/2 cup unsalted butter
- 2 tablespoons minced garlic
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust for spice preference)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- Lemon wedges for serving
Don’t have smoked paprika? Regular paprika will do just fine. And if cayenne is too spicy for your family, feel free to reduce it or swap it for chili powder.
Instructions
Let’s dive into the cooking process. Remember, it’s all about having fun and making memories along the way.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
- Pat the chicken wings dry with paper towels to ensure they get nice and crispy in the oven.
- Arrange the wings in a single layer on the prepared baking sheet. Sprinkle with salt and pepper.
- Bake the wings for 40-45 minutes, flipping them halfway through, until they are golden brown and crispy.
- While the wings are baking, melt the butter in a small saucepan over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
- Stir in the Dijon mustard, lemon juice, smoked paprika, cayenne pepper, salt, and black pepper. Let the sauce simmer for 2-3 minutes, then remove from heat.
- Once the wings are done, transfer them to a large bowl. Pour the cowboy butter sauce over the wings and toss to coat evenly.
- Garnish the wings with chopped parsley and serve with lemon wedges on the side.
Pro tip: Use a large bowl with a lid to shake and coat the wings in the sauce, just like my dad would do with his lentils and rice. It’s a fun way to get the kids involved too!
