- 1 pound ground beef
- 8 ounces pasta (penne or rotini works well)
- 1 cup corn kernels (fresh or frozen)
- 1 can (15 ounces) diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, cook the ground beef until browned, about 7-8 minutes. Drain any excess fat.
- Add the chili powder, garlic powder, salt, and pepper to the beef and stir to combine.
- Stir in the corn and diced tomatoes with green chilies, and let the mixture simmer for 5 minutes.
- Reduce heat to low and add the cooked pasta, cheddar cheese, and sour cream. Stir until the cheese melts and the mixture is creamy.
- Garnish with chopped green onions before serving.
