Ingredients
Scale
Here’s what you’ll need to create this culinary delight. Remember, substitutions are your friend, just like how my mom would turn a can of tomatoes into a masterpiece.
- 1 pound chicken tenders
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup crushed cornflakes
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray or oil for greasing
If you’re missing something, don’t worry. Swap the cornflakes for breadcrumbs or the Parmesan for cheddar. The key is to work with what you’ve got.
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper and lightly grease it with cooking spray or oil.
- Set up three shallow dishes: one with flour, one with beaten eggs, and the third with a mix of crushed cornflakes, Parmesan, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Coat each chicken tender in flour, shaking off the excess. Dip into the egg, then press into the cornflake mixture, ensuring it’s completely coated.
- Arrange the tenders on the prepared baking sheet. Lightly spray the tops with cooking spray for extra crispiness.
- Bake for 15-18 minutes, flipping halfway through, until golden brown and cooked through. The aroma will remind you of cozy family dinners, just like the ones from my childhood.
