Substitution suggestions: If you don’t have Camembert, Brie works beautifully here too. For pistachios, walnuts or pecans can be a nice swap if you want a different crunch. And if fresh thyme isn’t on hand, rosemary also pairs well with the flavors.

Instructions

  1. Preheat your oven to 350°F (175°C). While it heats, unwrap the Camembert and place it back in its wooden box (if it came in one) or on a small oven-safe dish.
  2. Score the top of the cheese in a crisscross pattern with a sharp knife—this helps the flavors sink in and the cheese melt evenly.
  3. Sprinkle the cranberries and chopped pistachios evenly over the top of the cheese. Don’t be shy here; the more, the merrier.
  4. Drizzle the honey over the toppings if you want a touch of sweetness. Then scatter the fresh thyme leaves on top and add a few turns of freshly ground black pepper.
  5. Place the cheese on the middle rack of your oven and bake for about 15 minutes, or until the Camembert is soft and gooey but not completely melted out of the container.
